Sights of New York City …….

Last week I decided to stroll the streets of New York City and mingle with the holiday crowds, taking in all the City has to offer – the sights, people, shopping, and glorious food carts lining many New York streets.  Also stopped in at the Grand Central Terminal and the New York Transit Museum.  Here are a few of the pictures….there are too many to post, but some of these are my favorites.  Eli’s Bread is for fans of baked goods – loaves of all sizes and shapes vying for counter and shelf space.  The Transit Museum is a must-see for families with children – the trains keep whizzing by and kids can spend hours in the museum.  Later stopped by the Bryant Park Christmas shops and picked up some cute gifts for kids.

Post-Christmas Fresh fruit juice

A refreshing glass of fresh fruit juice after all the mindless eating yesterday seemed perfect to begin the day.

This glass of juice was not only healthy and delicious but absolutely beautiful….a combination of stunning colors from a couple of apples and carrots, 3 celery sticks, 1 cup of fresh cranberries, a piece of fresh ginger….into my juicer, a few seconds later, there you have it.  How can you not want to drink this beautiful concoction – healthy, good for you, and so easy to whip up in seconds.

Quinoa Split Pea Salad

Quinoa and split peas make a wonderful combination, chewy quinoa and the soft peas tossed with sautéed onions, garlic, cilantro, and jalapeno.  A pinch of turmeric gives the salad a vibrant yellowish tinge.  Freshly squeezed lemon juice and salt round off the salad.  Serve warm or at room temperature.

I have no particular measurements here, just half a cup of cooked quinoa, half a cup of cooked split peas, a little diced onion, a clove of garlic – minced, and a few sprigs of fresh cilantro.
